Farming has been an integral part of life on the East End since the area was first settled in the 1600’s. Potato farms soon came to dominate the landscape. Even today, more than ten thousand acres of farmland are dedicated to growing potatoes in Southampton alone. Each autumn, when the crowds thin, the potato trucks take over the roads. Some intersections get covered with “mashed potatoes” thanks to spillage from overflowing trucks. |
